Quinoa is known as the queen of grains and is popular for its high protein balance and rich content of essential amino acids. It is also gluten free which makes it perfect for the allergic ones.

Quinoa provides all 8 essential amino acids and also carbohydrates, fats, vitamins, minerals, iron, calcium, magnesium. Quinoa is rich in protein – 16,2% to 20% protein content in some sorts. Quinoa seeds are valuable source of starch, sugars, minerals, vitamins and vegetable fibers. A cup of dry quinoa equals 318 kcal.

Before cooking make sure to rinse the Quinoa grains to remove the saponins traces. Quinoa in its natural state has a coating of saponins though most quinoa sold commercially has been processed to remove this coating.
Quinoa is cooked like rice – it can be boiled in water (1 cup Quinoa with 2 cups of water) for 20 minutes. When cooked, quinoa increases its volume 4 times and the little seeds become transparent in the center with little circle around it. In recipes quinoa may be excellent alternative to rice, couscous, groats.

How to boil quinoa - easy recipe

1 cup of quinoa • 1 1/2 cup cold water • 1/4 tea spoon salt (at will)


To soak or not to soak the seeds: usually there is no difference
Most of the quinoa on the market has been rinsed in advance and then dried, but sometimes it is not bad idea to soak it for 5 minutes so that the saponins or some dust will be washed away. You may skip soaking,  but consider getting the seeds rinsed.


Boiling: it boils really fast, just like rice. Cooked quinoa resembles couscous and is a little crunchy.

Total time for preparation: 5 minutes for preparation, 15 minutes for boiling
