Pumpkin seeds have long been valued as a source of the mineral zinc, and the World Health Organization recommends their consumption as a good way of obtaining this nutrient. While antioxidant nutrients are found in most foods, it's the diversity of antioxidants in pumpkin seeds that makes them unique in their antioxidant support. Pumpkin seeds contain conventional antioxidant vitamins like vitamin E.

We recommend a roasting time for pumpkin seeds of no more than 15-20 minutes when roasting at home. This recommendation supported by a new study that pinpointed 20 minutes as a threshold time for changes in pumpkin seed fats. However, when the seeds were roasted for longer than 20 minutes, a number of unwanted changes in fat structure were determined to occur more frequently.

The way to get the most out of pumpkin seeds is to eat them raw and organic Sprinkle them on top of a salad or cereal for extra crunch and protein Add them to raisins, nuts, and coconut flakes and you have your own trail mix.

Pumpkin Seed Guacamole
 
• 2 avocados, remove the skin and cube (keep the seeds)
• 1 red onion, diced
• 1/2 cup chopped cilantro
• 1 hot pepper, diced
• 1 lime, squeezed
• 1/2 lemon, squeezed
• 1/4 tsp salt
• 3-4 tbsp raw pumpkin seeds

Blend pumpkin seeds in a food processor for about a minute. You can smashed or chop them instead. For more flavor, you can toast the seeds in a dry frying pan over high heat for a while. Then add all ingredients to a large bowl and mix well. Mash avocados for a creamier texture or leave as rough cubes for chunky guacamole. Put the avocado seeds in the bowl, so that the guacamole does not darken, remove them right before serving.

Pumpkin Seeds Smoothie

• 1/3 cup pumpkin seeds (soak overnight to activate the nutrition)
• 2 bananas
• 3/4 cup oat milk, nut/seed milk or water
• 1/2 dessertspoon kelp powder
• 1/2 dessertspoon camu camu
• 3 dessertspoons of mesquite
• 1 tablespoon of maca

Start with blending the seeds in a blender, add all the left ingredients and continue blending till you reach a smooth consistency. Consume with joy!
